الملخص:The present study analyzes the sensory and physicochemical characteristics of meads made from honeys from four representative geographical areas of Mendoza, Argentina. The aim was to determine how the botanical origin and geographical conditions influence the final quality of the product. Based on a standardized protocol, the organoleptic profiles and chemical properties of the samples obtained were evaluated, identifying significant differences between them. The results allow the development of strategies to diversify the product and add value to it as an artisanal beverage with regional identity, promoting its acceptance in the domestic market.
