Riassunto:The objective of the work is to study and compare ordinary beers with beers to which blackberries are added at different stages of their production, and analyze how this affects their organoleptic characteristics such as flavor, smell and appearance. Two Golden style beers were brewed with variations on the recipe: one with blackberries added during the mash and another during fermentation. Differences in aroma, flavor and persistence were evaluated, and how the addition of blackberries in different phases impacted the concentration of compounds such as tannins and anthocyanins. The objective pursued was to develop innovative beers with good acceptance by the public that is interested in new trends, in this case with the addition of fruits. The effects of blackberries on the organoleptic profile were also analyzed and it was evaluated whether the time of addition significantly affects the characteristics of the beer.
